is it not something to do with the air temperatures equalising between the land and the sea?

Only if the wind was driven by a temperature gradient in the first place... IN reality it probably doesn't drop off just before sunset as I'm sure if you kept a record of it you would find just as many days whe the wind picks up just before sunset.
